Observation (CORRECTED DURING INSPECTION): AGAIN observed potentially hazardous foods being stored above the fill-line at the preparation cooler (upstairs kitchen) -double stacking of inserts for pasta and sprouts -temperature of sprouts at 12 deg C

NOTE: this was observed in the last routine inspection back on August 19, 2021 -continued infractions here will require increased enforcement such as ticketing

-overnight in the fridge (best option)
-under cool running water in the original plastic packaging
-as part of the cooking process
