Observation (CORRECTED DURING INSPECTION): Large vat of soup cooling in the downstairs walk-in cooler.
Corrective Action(s): Food MUST be cooled from 60-20C in 2 hours or less and from 20-4C in 4 hours or less. Soup was split into smaller, shallower containers at the time of inspection.

Corrective Action(s): All potentially hazardous foods must be stored at 4C or colder. Marinated potatoes moved back into the fridge.

- Reminder that no pesticides are allowed within the facility; use only physical traps

- sanitizer measured 100ppm chlorine, wiping rags stored in solution

- staff stated they took the FOODSAFE course yesterday for renewal; ensure that a copy of your certificate is available for review
