Observation: Sanitizer dispensing line in the dishwasher has bubbles and needs to be primed by manually pressing button each time it is in use. One of the employees understands how to do this, however, dishwasher does not dispense chlorine and leaves large gaps of no liquid in lines when this is not done.
Corrective Action(s): Fix the dishwasher timing belt or dispensing mechanism so it runs automatically.
Train all dishwashing employees to understand how this works in the meantime so there is not one staff person that facility needs to rely on. Be sure to test each time and ensure lines are not blank when dishwasher is running.

Observation: Dishwasher is not dispensing chlorine sanitizer.
0ppm Chlorine.
Line has large air bubble inside and is empty, sanitizer bottle is near full.
Operation has 2 comp sink for dishwashing and plus rinse sink. Operation is mostly single use utensils, only some equipment is occasionally cleaned in dishwasher.
Quat sanitizer dispensing into sink is >400ppm.
Correction: Please service or run the lines until the air bubble is gone and the lines have sanitizer again. Lines are running at the right cycle.
Please use 2 comp sink method for dishes in the meantime.
