Church commercial kitchen used for catering business. - Cooler (walk-in) at 4 degrees C or less. - Freezers at -18 degrees C or less. - No hot holding at time of inspection. - Food is covered. Raw animal products not stored above ready-to-eat items in cooler. - Probe thermometers available for internal food temperature checks. - Hot and cold running water, liquid hand soap, and paper towels in place for hand washing. - High temperature dishwasher reached 73 degrees C at the utensil surface (minimum required: 71 degrees C at the utensil surface). - Bleach available on site for sanitizing. Sanitizer was re-made during inspection and tested at 100 to 200 ppm chlorine. - General sanitation good. No signs of pest activity observed at time of inspection.
