Observation (CORRECTED DURING INSPECTION): Domestic fridge near the front had an ambient air temperature of 12 C, internal temperature of potato salad at 12 C (had been in the cooler for more than 2 hours). Ice build up noted in the freezer. Door of fridge section does not shut properly.
Corrective Action(s): Repair fridge Do not use it for potentially hazardous foods.
Can be used to store non potentially hazardous beverages until cooler is repaired.
Operator was instructed to discard potoato salad containers.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Quats sanitizer in spray bottle registered at 50 ppm.
Corrective Action(s): Minimum required concentration for quats is 200 ppm as per the manufacturer's recommendations. Operator made a fresh solution that registered 200 ppm quats.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: 2 compartment sink that is used for hand washing and dishwashing - both compartments full of dishes, paper towel from dispenser is blocked.
Hand sink in back storage area - no paper towel.
Corrective Action(s): All hand sinks should be fully equipped with hot/cold running water, liquid soap and single-use paper towels in dispensers. Sinks cannot be obstructed.
Keep garbage bins near sinks.
Do not use reusable towel to dry hands.
Correct immediately.

All coolers (except domestic cooler in front at 4 C or below).
Low temp dishwasher registered at 50-100 ppm chlorine during the final rinse cycle.

Hot foods must be cooled from 60 C to 20 C within 2 hours and from 20 C to 4 C within 4 hours.
Do not leave food on the counter for hours without monitoring temperatures or taking steps to actively cool the food.

Door leading to the back entrance kept shut and has a door sweep - good.

Reminder: shut back door in kitchen fully when not in use.

Reorganize dishwashing pit area. Sacks of potatoes should not be stored here.
