*Food contact surfaces coming in contact with EP66 and EP50 hydrogen peroxide based disinfectant must be rinsed off with potable water. Alternately, you may use either 100 ppm chlorine bleach solution or 150-200 ppm quats sanitizer as no rinse sanitizing options. * The interior of the ice bin must be cleaned and sanitized every month. Walk-in cooler: 2.5 degrees C. Walk-in freezer below -18 degrees C. Upright cooler at 4 degrees C or below. Sliding door cooler: 3.5 degrees C. Dishwasher reached 73.4 degrees C during final rinse. Liquid soap and paper towels available at the hand sinks. General sanitation is satisfactory. Temperature logs are up to date.
