All refrigeration units ( 2 door drink cooler, sushi prep stations (x2), sushi prep display (x2), walk in cooler, insert cooler (behind stove range) < =4 C.
All freezer units (chest freezer, upright 2 door freezer, small one door/back < -18 C.
Thermometers for cold units - available.
pH of sushi rice - satisfactory.
Hot holding units /Miso soup/ at 61 C.
High temperature dishwasher at 73 C.
Surface sanitizer in kitchen and sushi prep area at 100 ppm of Chlorine.
Food storage -well organized.
Ice machine - clean.Scoop stored safely at the time of inspection.
All hand washing sinks supplied with liquid soap and paper towel/hot & cold running water.
