Routine inspection:

Display cooler not in use at this time. Operator stated it is turned on during the weekends.
Display freezer at -18 degrees or less.
Small freezer at -20 degrees C.
Walk in cooler at 2 degrees C.
Walk in freezer at back -16 degrees C.
Back area provided with a 3 compartment sink for manual warewashing.
Front area provided with a 2 compartment sink.
Reminder: when in operation of the meat with processing, a 100ppm bleach sanitizer solution is to be prepared. General sanitizer solution formula: 1 oz of regular unscented bleach to 1 gallon of water.
Band saw and other processing equipment is cleaned and sanitized with a bleach sanitizer solution, usually on the weekends.
