Observation (CORRECTED DURING INSPECTION): The dish machine was noted in use and < 10 PPM chlorine residual was detected from the dish machine after running a cycle.
Corrective Action(s): Staff fixed the dish machine and 50 PPM chlorine residual was detected at plate level after running a cycle.
Rewash everything in the dish machine that was washed this morning.
Note: This is the second time this violation has been observed. Going forward, staff MUST check the dish machine in the morning to ensure that at least 50 - 100 PPM chlorine residual can be detected prior to using the dish machine. If this violation is repeated in the future, progressive enforcement actions may occur.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Food was stored unprotected with no covers/ lids in both the walk-in cooler and walk-in freezer. Observed a container of lettuce stored without protection in the walk-in cooler and ice buildup was defrosting from the fan system in the unit that could potentially contaiminate the lettuce.
2. 2 strainers were noted in poor condition with wires sticking out.
Corrective Action(s): 1. Staff removed the lettuce from the walk-in cooler and stored it in a food-grade bag.
Cover all food in the walk-in cooler and walk-in freezer.
2. Discard the two damaged strainers to prevent pieces from potentially coming off and becoming a physical hazard to food.

Observation: Small amount of mouse droppings noted in the cabinet below the hand wash cabinet in the cookline and in the mop room.
Corrective Action(s): Sweep, clean and sanitize the abovementioned areas noted with mouse droppings.
Continue to work with your pest control company to control the pest issue in the facility.

Observation: Dust buildup noted on the ceiling vent and surrounding area in the kitchen area.
Corrective Action(s): Clean the abovementioned areas to avoid any dust from getting onto food that is being prepared below.

Observation: 1. < 10 PPM chlorine residual was detected from the low temperature dish machine.
2. Ice was noted on the pipe of the fan system in the walk-in cooler and the ice was noted thawing in the unit.
Corrective Action(s): 1. **Issue corrected** Dish machine was fixed. 50 PPM chlorine residual was detected at the plate level.
2. A bowl was temporarily placed under the ice buildup to catch the thawing water. Fix the walk-in cooler.

Observation: Cardboard noted being used as liner in the upright freezer in the back storage area.
Corrective Action(s): Remove all cardboard being used as liners. All surfaces in the facility must be imprevious to moisture and easy to clean and sanitize.

Observation: Operator was not onsite at the time of inspection. No other staff at the time of inspection has a valid FOODSAFE level 1 or equivalent certificate.
Corrective Action(s): One of the staff who was present during the inspection must complete FOODSAFE level 1 or equivalent within the next two weeks.
It is the operator's responsibility to ensure that when he is not at the facility, one other staff member who is present must be certified.

Routine inspection conducted today:
Handwash stations accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Rice in the rice cooker was being held at 62.0C.
Frozen food was being thawed under cold running water.
100 PPM chlorine residual detected in 2 sanitizer spray bottles in the kitchen area.
No inappropriate dispensers were (e.g. bowls) being used and stored within bulk food containers.
