Observation: Wiping rags were stored directly on food preparation table. All wiping rags need to be stored in a sanitizing solution to prevent cross contamination.

Observation (CORRECTED DURING INSPECTION): Observed food handler in the back kitchen hand washing with disposal gloves on. This is not proper hand hygiene as disposal gloves need to be removed and replaced when switching between food tasks.

Routine inspection conducted and the following were noted.
Stand up produce cooler at 4C.
Front sushi back cooler less than 4C.
Back chest freezers were at -13C and -18C.
No pest activity noted.
Chlorine dishwasher achieved a final rinse concentration of 100ppm. Chlorine test paper available. Ensure to use chlorine test paper daily to verify low temperature dishwasher is in god working order.
Hand washing stations available.
