Observation (CORRECTED DURING INSPECTION): Large pot of tomato sauce noted in the walk in cooler. Operator informed us that they cool down the pot in the sink with water for an hour before transferred to the walk-in cooler. No ice or other methods to cool down the food noted on site.
Correction: Cooling foods must follow the following timeframe:
1) > 60 Degrees Celsius ---> 20 Degrees Celsius within 2 hours
2) 20 Degrees Celsius ---> 40 Degrees Celsius within 4 hours
In order to achieve 4/2 hour rule following methods are recommended:
1) Purchase cooling wand
2) Make smaller batch

Observation (CORRECTED DURING INSPECTION): 1) all the cold potentially hazardous foods in the walk in cooler noted > 4 Degrees Celsius
- Curry (3): 9-10 Degrees Celsius (internal)
- Tomato sauce: 10.5 Degrees Celsius (surface)
2) Tandori chicken and pakoras on the cold holding unit noted at 20 Degrees Celsius (surface)
3) Lemon juice in squeeze bottle noted on prep table.

Correction: 1) Other than vegetables and raw chicken, all other ready-to-eat foods must be discarded. Raw chickens to be relocated to cold holding unit in the front.
2) Discard all but the amount required for the display. This is noted during last inspection as well.

Observation (CORRECTED DURING INSPECTION): Hot holding unit was not set at its maximum setting. Food items on the unit ranged from 50-60 Degrees Celsius. This was noted during last inspection.

Correction:
1) Use higher temperature setting
2) Constantly stir the food items
3) Properly reheat foods and hot holding unit before transferring the hot foods.

Observation: Utensils in white bucket was not stored in a sanitary manner. Waste water noted at the bottom.
Correction: Clean and sanitize the utensils and bucket which holds these utensils.

Observation (CORRECTED DURING INSPECTION): Handwashing station blocked. Mop was placed in the sink.
Correction: Do not store mop in handwashing station sink.

Observation: 1) Fruit flies noted by the mop sink and front wall above the sink.
2) Rodent droppings noted under the freezer and dish wracks.

Correction: 1) Purchase and install fly traps. Increase sanitation to prevent attracting pests. Keep garbage bin closed at all time.
2) Remove rodent droppings then clean and sanitize the area. this is to monitor new rodent activities and to deactivate bacteria and viruses and pheromones which can attract more rodents.

Observation: Walk in cooler noted at 9 Degrees Celsius. Temperature did not change even after the operator adjusted the dial.

- up-right freezer: -18 Degrees Celsius
- No food items noted in dry storage area
- Went over Cooling practice and manual dishwashing procedure
- Domestic deep fryer noted on site. Do not use deep fryer without a hood. This was noted during last inspection.
