Food Safe Level 1 (equivalent) - Manager on site has Food Safety training - expiry date March 2026. Renew certificates before expiry date.
Coolers are at 4C/40F or colder, including walk in cooler.
Freezer - ok -18C/0F.
Keep daily temperature records. Thermometers - see above.
Hand washing sink has hot/cold water, liquid soap, and paper towels in dispensers.
Sanitation plan: **Provide information on the egg wash spray dispenser. Use only food grade utensils.
Quats sanitizer used. Use the correct amount of quats sanitizer concentrate for the volume of water used in spray bottle (amount is on chemical bottle label).
Wiping cloths - Reviewed chlorine sanitizer requirements. For 100-200ppm, use 2-4mL domestic bleach in 1 liter of water.
Dishwasher - hot water final sanitizing rinse shows 85/86C on final rinse temperature gauge and temperature inside of machine just reached 71C (as required to sanitize). Check daily that final rinse temperature reaches 85/86F.
**Surfaces: Some shelves are becoming worn. Future resurfacing may be required. All surfaces are to be impervious to moisture so that they can be kept clean.
General cleaning - ok.
Pest control monitoring in place.
Notify Fraser Health if there are any proposed changes to kitchen or operation.
