Observation: External temperature gauge on the high temperature dishwasher is reading 180F however, when thermolabel is run through, the temperature at the dish/tray level is not reaching minimum required temperature of 160F (lower temperature of 150F is not even being reached). ATP tests are done quarterly on the trays that come out of the dishwasher and have consistently read zero.
Corrective Action(s): Have dish washer serviced/repaired so that it consistently reaches 170F at the dish level. Due: Dec 15, 2023
In the mean time, increase ATP testing of trays to daily and if any readings come back in the 'unacceptable' range according to the ATP monitors instructions, switch to using a chemical sanitizer.
