Observation (CORRECTED DURING INSPECTION): Raw meat stored at room temperature near the prep cooler. Internal product temperature measured at 18C. Staff stated the meat is stored at room temperature for 1 hour.
Corrective Action(s): Potentially hazardous food such as raw meat must be stored at 4C or less. Move the raw meat into a functional cooler.

Observation: Left over doughs observed on the dough mixer. Staff stated the mixer was used this morning.
Corrective Action(s): Clean and sanitize the dough mixer immdiately. Dough mixer should be cleaned and sanitize after each use or every 4 hours if it will be used multiple times within the same day. Correct by: Immediately.

Observation: A storage table was added in front of the hand washing station located near the cook line.
Corrective Action(s): Remove the table from the aforementioned location immeidately. Do NOT obstruct any hand washing station in the facility. Correct by: Immediately.

Observation (CORRECTED DURING INSPECTION): Bags of flours were stored beside cleaning chemicals beside shelving units in the hallway.
Corrective Action(s): Move the cleaning chemical away from flours immediately. Food items must be stored away from chemicals at all times to reduce the risk of contamination.

Observation: Debris observed at the following locations:
1. under the cook line (e.g deep fryer).
2. on the floor around the area near the dishwashing station.
Corrective Action(s): Clean the aforementioned locations. Follow your sanitation plan for regular cleaning schedule for hard to reach areas. Correct by: today.

- Coolers (glass-door, under the counter, prep, walk-in) maintained at 4C or less.
- Freezers (stand-up, chest) maintaineda t -18C or less.
- Hot potentially hazardous food stored above 60C.
- Other hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm bleach sanitizer available in bowls with wiping clothes stored inside.
- High temperature dishwasher registered 72C at the plate level.
- Food products stored off the ground.
- No pest activities observed at the time of the inspection.

Note: Staff stated temperature records were maintained but not available for review to the Environmental Health Officer. Maintain the temperature record on a daily basis and it must be available for review during inspections.
