Observation (CORRECTED DURING INSPECTION): Bleach sanitizer solution in bucket was not strong enough - only 10 ppm chlorine detected. Solution was visibly dirty/used.
Corrective Action(s): Ensure sanitizer solution is changed as soon as the solution becomes visibly cloudy or dirty, to ensure the strength of sanitizer is adequate. 100 ppm - 200 ppm is required at all times.

Comments

- Paper towel dispenser at hand sink in kitchen was in use - good.
- Ventilation canopy baffles have been cleaned and sanitized
- Dry ingredient storage bins have been cleaned and sanitized
- Dough machine was in use at time of inspection - OK. Ensure it is completely cleaned and sanitized after use.
- Food in walk-in cooler and prep coolers are now covered - good
- Scoops no longer being stored directly in dry ingredients
- Pizza prep cooler is now equipped with an accurate thermometer
**Reminder that bleach solution in bucket for storing wiping cloths must be changed as soon as it becomes visibly dirty or cloudy, or every 4 hours at a minimum.
