Observation: Mice droppings noted on storage shelves near 3-compartment sink and low shelf of the pizza prep.table.
Corrective Action(s): Clean and sanitize all.
Note: Observed sticky trap near 3-compartment sink. If the issue with pests - look for a professional pest service.

Comments

- General sanitation - satisfactory (however, some corrections required/see violation sections).
- Walk-in cooler - satisfactory (please keep temperature in the cooler <= 4 deg C).
Note: Hot holding unit is not in use at the time of inspection.
Note: As per our discussion during the follow up inspection - remove from the store equipment, which will be not in use (old or broken).
Note:Domestic freezer is turned off a /tape sealed and water is leaking from the freezer. The operator claimed that the freezer will be removed from the store.
- Thermometer for prep cooler provided. Please keep temperature log up to day.
- Storage shelf above the prep. table in a good condition now/painted.
- Food storage - satisfactory.

Friendly reminder:
-Hand sink must be accessible all the time (do not block the hand sink any time).
-Keep a surface sanitizer handy and use it for food contact surfaces.
- Mesh for a back door has to be repaired (observed a hole).
- All dust in the walk-in cooler has to be removed (clean the cavity of the cooler).
