Observation (CORRECTED DURING INSPECTION): Sanitizing solution contains 10ppm chlorine. The chlorine is diluted with water and then diluted a second time.
Corrective Action(s): Corrected: Staff are now using 1/2 - 1 tsp undiluted domestic bleach in 1 liter of water to create a 100-200ppm sanitizing solution for sanitizing wiping cloths and counters etc.

Comments

Coolers are at 4 C/ 40 F with the exception of the 2 door prep cooler by rice cooker. This cooler is at 8 C and is only to be used for storage of non-potentially hazardous foods (whole uncooked produce, acidic foods, etc.) - ok.
Food being cooked on stove - boiling.
Hot holding cooked rice - temperature 60C/ 140F or hotter - good.
Yogurt - discussed.
Two kitchen hand sinks have hot/cold water, liquid soap, and paper towels in dispensers.
Reminder to check Food Safe certificates and renew by taking refresher course before they expire as there is a 5 year expiry date. Check dates and call Fraser Health if you have any questions.
Chlorine sanitizer - see above.
Commercial dishwasher has a hot water final sanitizing rinse of 82C/ 180F at the gauge and 71C/ 160F measured inside of the machine - good.
Cleaning - a routine cleaning schedule is being followed (weekly deep cleaning).
Cooking exhaust and grease trap routinely cleaned (scheduled for next week).
No evidence of pests (checked floor, shelves, food storage areas, and single use container storage). No gaps under doors.
