Observation (CORRECTED DURING INSPECTION): Ice machine in back storage area had slight biofilm/mould growth on condenser panel.
Corrective Action(s): Ensure to clean and sanitize ice machine more frequently. Empty ice machine prior to cleaning and sanitizing. Staff began cleaning ice machine at time of inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): One spray bottle of sanitizer had 0 ppm quat detected and a "use by" sticker dated for November.
Corrective Action(s): Ensure to refill all bottles with fresh sanitizer regularly. Staff filled bottle with new sanitizer solution; 200 ppm quat detected.

Comments

- All hand sinks were equipped with liquid soap and paper towel
- Walk-in cooler measured to be 3C
- Walk-in freezer measured to be -16C
- All other coolers measured to be at or below 4C
- Small freezer measured to be -18C
- Hot holding available at above 60C
- Quat sanitizer from main dispenser and in several spray bottles available at 200 ppm
- Wiping cloths soaking in buckets of chlorine solution sanitizer at 100ppm
- Dishwasher had 50 ppm chlorine detected after final rinse cycle
- 3-compartment sink was set up for manual dishwashing at time of inspection; 200 ppm quat detected in sanitizing compartment
- Food held at room temperature and sanitizer solution for soaking wiping cloths labelled with "use by" time stickers
- Temperature logs well maintained
- Ice scoops stored in designated holders
- Ice cream machines were clean, drink dispensers clean
- Food storage organized
- Pest control in place, no signs of pests noted at time of inspection
- Washroom sanitation satisfactory
