Observation:
Minor amount of rodent droppings noted in the following areas:
- prep table near the prep coolers
- underneath dry storage shelving
- by back wall
Corrective Action(s):
1) Clean rodent droppings as soon as they are found using a 1:10 bleach solution (1 cup bleach: 10 cups water)
2) Ensure that all foods are stored in pest proof containers
3) Check foods for rodent damage before using. Damaged foods must be discarded
4) Contact professional pest company if required. Currently, operators are monitoring the rodent situation and are using physical traps (sticky traps). Reminder that poisons cannot be used within the facility.

Comments

General:
- both handwashing stations stocked with soap, paper towels and hot and cold running water
- sanitizer measured 200ppm quats - ensure that concentration is checked every time sanitizer bottle is filled due to potential air gaps in the tubing
- three compartment sink not set up at the time of inspection
- foods date-labelled to facilitate FIFO
- general sanitation is satisfactory - include the fan covers of the prep cooler in your sanitation plan
