Observation (CORRECTED DURING INSPECTION): Internal temperature of foods in prep coolers ranged from 9.4 Degrees Celsius - 10.1 Degrees Celsius. Air temperature noted at 8 Degrees Celsius - 9 Degrees Celsius. Both cooler doors and top compartment doors were closed for extended time, however, temperature did not dropped significantly.
Correction: For non-busy hours perishable food items are to be stored in walk in cooler. During the dinner rush, use ice bath. Make sure ice line is at or above food fill line. Change ice bath frequently to keep foods at or below 4 Degrees Celsius.

Observation (CORRECTED DURING INSPECTION): Frozen Bags of seafood and a tray of fish fillets noted just outside of the walk in cooler. Cook informed us that these are out so that it is easier to process. Temperature of the fish tray was 2 Degrees Celsius.
Seafoods were processed then stored in walk-in cooler
Correction: Implement proper thawing procedure. Recommendation:

Observation: strainer's metal wires and rubber spatula damaged by wear and tear.

Correction: Wear and tear from these utensils can be a physical contaminants and prevent them from proper cleaning and sanitizing. Above noted utensils were discarded
Both prep coolers could not reach 4 Degrees Celsius even after the cooler door were closed for a long time and checked with 4 thermometers (1 IR + 2 probe)

Comments

- Handwashing stations stocked with running hot/cold water, liquid soap, paper towel.
- Hybrid (High temperature + chlorine) dishwasher noted at 69 Degrees Celsius and 100 ppm chlorine.
- Temperature log maintained 3 times a day with IR gun
- In-use utensils noted in hot water (60 Degrees Celsius) with floating oil and food debris. Water was replaced after the busy lunch rush.
- Floors of the kitchen and walk-in cooler requires re-surfacing. This issue was mentioned in 2017 July report. Floors are exposing stones/pebbles beneath the finished surface.
