209 - Food not protected from contamination [s. 12(a)] Observation: -Noted raw meat stored above vegetable, stock , sauces , kimchi in 3 door upright cooler and prep cooler in cooking area -Some foods - dry foods ( bags) and buckets are stored directly on the floor Corrective Action(s): -Store raw meat away and under any veg or ready to eat products .Recommendation: One side of 3 door cooler could be used for only raw meat. -Temp of all coolers and freezers are satisfactory -Dishwasher temp >75 oC at plate -Ice machine is clean and sanitary - Ice scoop are kept out of machine -Hot holding temp >60 o C -Bleach solution in spray bottle and bucket >100 ppm - paper towel and liquid soap are provided at hand washing sink ** Still the up stair storage area is not accessible without risk- keep it clean and just a freezer not other foods storage is allowed up there.
