- Hand wash sink stocked with warm running water, liquid hand soap and paper towel
- Dry storage well organized - no signs of pest activity
- Adequate sanitizer stocked
- Sliding glass door cooler holds below 4 degrees Celsius
- Chest freezer and standing freezer hold below -18 degrees Celsius
- Overall sanitation is satisfactory

Note: Inspector discussed using time tracking as a method to ensure safe food handling of hot foods. Hot dogs had been place on rolling grill unit for less than 20 minutes; probe thermometer measured 26.1 degrees Celsius at that time. Discussed ensuring that number of hot dogs on grill does not exceed what can be turned over within two hours with staff. It is recommended that a hot dog time tracking sheet is put into place, along with a probe thermometer. Hot foods should be maintained at or above 60 degrees Celsius. If temperatures of hot foods measure less than 60 degrees Celsius, then foods should be discarded after two hours.
