205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Coffee creamers were stored in a cooler that is being used as a dry storage unit that was above 4 degrees C. Coffee creamers were at about 5 degrees C and were stored in this cooler for less than 2 hours according to staff.
Corrective Action(s): Coffee creamers were moved into another cooler at or below 4 degrees C at the time of inspection. Make sure the dairy creamers are stored/displayed at or below 4 degrees C. Do not use the unplugged cooler to store any potentially hazardous food.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Handsink near the cake decorating area does not drain properly. Operator stated that they would contact a technician to repair the drainage issue today. Table was obstructing the handsink in this area as well. Staff members are on-site twice a week using this cake decorating area according to the Operator.
Corrective Action(s): Table was moved from blocking the handsink. Make sure staff members wash their hands at the other handsink near this area if prior to handling food. Ensure repairs are made so that the water drains properly at this handsink; Correct today. Review with staff to not obstruct any handsinks.

Observation: A ceiling tile was missing above the area where dry goods and syrups are stored. Owner stated that they have the ceiling tile on-site and that they would place it back.
Corrective Action(s): Make sure the ceiling tile is placed back where it is currently missing in the kitchen; Correct today.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) A leak was present on the line from a sink that leads into an under-the-counter cooler. A bucket was placed to contain the leak for the time being. Food was covered on the other side of this cooler.
2) Walk-in-freezer was at -6 degrees C at the time of inspection.
Corrective Action(s): 1) Make sure the necessary repair is made to prevent a leak inside this cooler; Correct today.
2) If the walk-in-freezer is not on a defrost cycle and does not return to a temperature of at or below -18 degrees C, then re-service, adjust, or repair it so that it maintains a temperature at or below -18 degrees C.

Observation: A floor tile was not intact near the walk-in-freezer. A tile near the floor of the handsink in the back area was missing as well.
Corrective Action(s): Replace the broken tiles with intact tiles near the walk-in-freezer and handsink; Correct within 2 months.

Observation: Built-in thermometer was not in good working order for the walk-in-freezer.
Corrective Action(s): Make sure the walk-in-freezer is equipped with a thermometer that is accurate to within 1 degrees C; Correct within 2 days. In the meanwhile, use another thermometer from another cooler to monitor its' ambient temperature.

Comments

Other handsinks were adequately supplied.
Both walk-in-coolers and other coolers were at or below 4 degrees C.
One cooler was unplugged and must only be used for shelf stable dry food. See above noted violation regarding coffee creamers.
Other freezers were at or below -18 degrees C.
Meat patties were being covered in food containers in the upright one door freezer.
200 ppm QUATS sanitizer was available from the dispenser, in the spray bottles, and buckets with wiping cloths.
No signs of recent pest activity were present at the time of inspection.
Operator has renewed their FOODSAFE Level 1 refresher course certificate (valid until December 13, 2023).
