Observation: Lack of sanitizer solution at front food preparation area. CORRECTED DURING INSPECTION
Staff could not locate any sink plugs/stoppers in back sink area for washing and sanitizing of food equipment.

Corrective Action(s): Locate sink plugs/stoppers.
If sink plugs/stoppers can not be located by follow up inspection the facility will be ordered to cease all food production until such time as sink plugs/stoppers can be obtained.

- No evidence of pests
- Pest control program in place
- Handsinks adequately supplied
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Sanitizer solution from dispensing unit at concentrations of greater than or equal to 200ppm QUAT
- Test strips available for use
- Proper re-heating methods observed for previously cooked food items - temperatures of over 75 degrees Celsius observed
