Observation (CORRECTED DURING INSPECTION): 1. Hot holding bean paste surface temperature 34C, internal temperature 1/2 way through the mixture is around 48C, bottom of mixture internal temperature is around 60C.
2. Rice mixture. Food safety plan according to Manager is to put cold rice in container of warming unit and pour hot boiling water on top. Rice surface temprature around 34C, 1/2 way through the mixture is around 40C. Bottom of mixture is close to 60C.
No stirring is required according to food safety plan.
Corrective Action(s): Stir food items reguarly so mixture is hot holding at 60C throughout or use up within 2hrs.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Floors are greasy.
2. Floors have trails of litter from the receiving back door, to the storage area, through the hall to the food prep area and main food prep line. There are at least 5 gloves littered throughout the facility including 2 clogging the drain of the mop sink, 1 in the corner of the hand sink. There are food bags littered in the main food prep area.
3. Steamer for soft tacos: water from bag is dripping into container for bean paste and beef mixture. Had to be replaced twice during the inspection.
4. Staff change/storage area and washroom is in need of maintenance and repair. Some storage of single use food bags in this area. Badly chipped counter, missing tiles, holes in the wall. Fans (for use in summer) need to be cleaned and free of dust before use again.
5. Entrance to kitchen hand sink: paper towel dispenser handle (for elbow) does not bounce back after being pushed down, does not dispense paper towel easily. Dispenser surface is in need of cleaning.
6. Main line drawer unit facing main prep line: drawers have been removed, inside railings have grime and grease build up.
Corrective Action(s): 1. Follow instructions for floor cleaner and degreaser for use.
2. Maintain cleaning on regular basis. Discard gloves in garbage bins.
4 and 6. Review and repair at next renovation.
5. Fix and repair as soon as possible.

Cloths are stored inside sanitizer bucket.
Operator observed to sanitizer probe thermometer before checking temperature of foods, great job.
Operator is knowledgeable about food safety and temperatures.
