Observation (CORRECTED DURING INSPECTION):
Several containers in prep cooler lacked a food grade cover/lid.

Place a food grade cover/lid on top of all open containers to protect food from contamination.

Observation (CORRECTED DURING INSPECTION):
Back storage room door open at time of inspection without supervision. This storage room is adjacent to the open patio and if left open without supervision, can lead to potential entry of pests.

Close storage room door when not in use.

Comments

Routine Inspection:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- All coolers maintained at or below 4 degrees Celsius.
- All freezers maintained below -18 degrees Celsius.
- Bleach sanitizer in spray bottles = 200 ppm.
- High temperature dishwasher sanitizing with >71 degrees Celsius at final rinse on dish level.
- Ice machine clean. Ice scoop stored in designated container on top of ice machine.
- Overall cleanliness satisfactory.

Notes (for floor plan):
- Sliding door cooler in kitchen has been removed and will no longer be used in the facility. Cooler is stored outside for now to be picked up for disposal.
- Prep cooler has now been moved from previous location in the kitchen to where the sliding door cooler used to be.
- A new 4 burner stove has been added in the kitchen under the ventilation hood.
*****Update these changes on the floor plan as indicated in violation 101 above.*****

In addition to the violations above, the following require your attention:
- Submit copy of menu.
- Change outside sign from previous facility name to Castro's Tacos.
- Paint the wall behind the prep cooler - this wall was covered before with the sliding door cooler however now this wall needs some patching up and painting.
