Observation (CORRECTED DURING INSPECTION): Quats sanitizing solution prepared manually was much greater than 400ppm - unable to detect concentration.
Corrective Action(s): Quats sanitizing solution must be maintained at 200ppm to 400ppm. Concentrations in excess of 400ppm may be toxic for human health. Operator was instruction on proper preparation of Quats sanitizing solution at the time of inspection. 200ppm Quats sanitizing solution was prepared.

Comments

-Hot dog centre island cooler was at 4C.
-Hot dog centre island cooler inserts were at 4C.
-Dairy cooler was at 4C.
-Wall display cooler was at 4C.
-Dairy dispenser was at 1C.
-Swirl SoftServe hopper was at 4C.
-Upright freezer was at -25C.
-Back storage area freezer was at -18C.
-Frozen novelty freezer was at -18C.
-Hot holding was less than 60C (time is used as a control method). Food items are time tracked and are discarded after 4 hours. Records available on-site. Hot foods are cooked to greater than 74C and probe thermometer available on-site to verify proper cooking temperatures.
-Temperatures are checked and recorded daily.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottle was labelled and tested at 200ppm. Keep sanitizer spray bottle in the front and not the back room.
-Swirl SoftServe sanitized with chlorine based sanitizing solution weekly.
-Sneeze guard present over hot foods in customer area.
-Food items stored off the floor and protected from potential contamination.
-Random selection of food items were within their best before dates.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Operator FoodSafe Level 1 valid until June 3, 2022.
