Observation (CORRECTED DURING INSPECTION): Two dirty knvies were stored in the knife holder on the side of the prep table. Chef stated the knife holder is usually not used and dirty knvies were stored inside a bucket before cleaned and sanitized.
Corrective Action(s): Chef moved the two knvies into a cleaning bucket. Ensure dirty knives are not stored in knife holder to prevent possible contamination of food.

Comments

Routine inspection:
- Coolers (Glass-door, walk-in, under the counter) maintained at 4C or less.
- Side display cooler near the ice machine maintained at 7C. Only non-potentially hazardous desserts stored inside.
- Middle display cooler at 8C. Only beverages stored inside.
- Hot holding units maintained above 60C. No food was stored in the unit at the time of inspection.
- Hand washing stations provide with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quats based detergent sanitizer available from the dispenser. Sanitizer require rinse with potable water after use for food contact surfaces. Strict follow manufacture's instruction when using the sanitizer.
- High temperature dishwasher registered 77C at the plate level.
- Ice machine maintained in a sanitary condition.
- Food products stored off the ground and organized.
- Temperature records maintained and available for review.
- General sanitation satisfactory.
- Pest activities not observed at the time of inspection.
