Wiping cloths stored in solution when not in use. Frequently used scoops stored in ice water baths. 3 preparation cooler inserts and lower sections at or below 4 degrees C. Hot holding of rice and soup at or above 60 degrees C. Permit posted. Temperature monitoring records maintained and available for review. Back hand sink provided with liquid soap and paper towels. 200ppm quats dispensed from chemical dispensing station at 2 compartment sink. Dishwasher registers 73 degrees C at the plate surface during the final rinse cycle. Walk in cooler at 3 degrees C. Upright freezer at -20 degrees C.
