Observation (CORRECTED DURING INSPECTION): Chemical dishwasher had no detectable chlorine disinfectant.
Corrective Action(s): Chemical dishwasher must dispenser at least 50ppm chlorine on the dish surface for proper sanitizing. Staff must check dishwasher each day to verify proper chlorine disinfectant. DIshwasher was primed and was tested at 50ppm at the time of inspection. All dishware and utensils to be washed and sanitized through the dishwasher.

Observation: Cockroaches with various life stages and cockroach droppings were found in the kitchen by the chest freezer compressor.
Corrective Action(s): Public Health Act Closure Order has been issued regarding pest infestation. Have facility serviced by a professional pest control operator to eliminate the cockroach infestation. Once facility has been serviced, all dishware, equipment, and utensils must be cleaned and sanitized. All food contact surfaces must be cleaned and sanitized as well. Pest control operator report must be available for review.

-Walk-in cooler was at 3C.
-Prep cooler was at 4C (top and bottom).
-Front sweet cooler was at 4C.
-Chest freezers were at -18C and -25C.
-Undercounter freezer was at -10C.
-Sauces in the walk-in cooler was at 4C - sauces were properly cooled.
-Chemical dishwasher primed and tested at 50ppm.
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail properly labelled and tested at 100ppm chlorine.
-Foods properly stored off the floor and covered. Raw meats stored below ready-to-eat foods.
-Washroom clean and well supplied.
