-The low temperature dishwasher dispensed 50ppm chlorine sanitizer at 45 C at the plates level.
-Test strips available to monitor sanitizer concentration. The operator must monitor daily.
-Working thermometers in all refrigeration units.
-Daily temperature logs available.
