Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Observed the following:
1. High temperature dishwaser was not maintained in sanitary condition. Top of the mechanical door that moves was caked with solidified oil and other debris. Surfaces were not maintained in sanitary conditions.
2. Cooler and freezer door handles throughout the kitchen were not maintained in sanitary conditions. Door handles had food debris and grease on them.
Correction: Required operator to clean and sanitize the mentioned above. Ensure to perform regular cleaning to maintain sanitary condtions at all times.
