Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Table-top green onion shredder/slicing machine was observed to be dirty and had not yet been in use today. Staff onsite did not know how to disassemble the machine for proper cleaning and sanitizing.
Correction: All equipment must be thoroughly cleaned and sanitized after each use or at least every 4 hours if in use continuously.
Ensure staff are properly trained on how to clean and sanitize all equipment. Do not use this machine until it has been properly cleaned and sanitized.
Comments

- Follow-up inspection conducted.
- Table-top green onion shredding machine was noted to be clean at time of inspection. Instructions for disassembly and cleaning/sanitizing have been printed and posted for staff.
- Deep cleaning under cooking equipment has been completed. Please continue to do so at least once a week.
- Additional staff have registered for FoodSafe course. Good.
- Additional prep table in the back area has been relocated to the front. Operator is no longer doing any food preparation in the back area - good. As discussed, the back area has not been previously approved for food preparation as there is no hand washing sink in the back.
- Mop bucket was empty and properly stored upside-down in mop sink.
- Operator has contacted fire department/professional cleaners for servicing of ventilation canopy, however note that the filters/baffles and exterior surfaces of the ventilation hood must also be cleaned and sanitized by staff in between professional cleanings.
