Comments

Two-compartment sink was supplied with hot and cold water, soap and paper towels. Both domestic refrigerators were < 4 C and their freezers were < -18 C. Temperature records were up to date. Domestic dishwasher should be run on the sanitizing cycle every time. Quats sanitizer was at 200 ppm. No evidence of pests, traps are in place. General sanitation was satisfactory.
