Observation (CORRECTED DURING INSPECTION): 1. A stainless steel bowl was in use to scoop brown sugar
2. A pot of heated sugar was being cooled on top of the grease trap
Corrective Action(s): 1. Provide a stainless steel scoop with a handle to prevent contamination
2. Do not store any food items on top of the grease trap. The grease trap is not a sanitary.

Observation (CORRECTED DURING INSPECTION): A standup slide door cooler was relocated. A chest freezer with a stainless cover was placed where the standup slider door cooler was located at the time of initial inspection.
Corrective Action(s): Do not relocate or place any equipement unless approved by the Health Department.
The operator stated they put a stainless still cover on the chest freezer to create more working space.
This is acceptable under the condition: opening of the chest freezer in the morning only. Only the bottles of frozen fruit teas were placed in the chest freezer. Transfer the frozen fruit teas from the chest freezer to the stand up freezer daily in the morning.
