Observation: Repeat Violation: Since previous inspection cooling log records are maintained inconsistently. Some staff are not documenting that foods reached 4 C in a safe time frame on the cooling log.
Corrective Action(s): Food product not verified to have reached 4 C within a safe time frame shall be discarded.

Foods must cool from 60 C to 20 C in less than 2 hours and following, from 20 C to 4 C in less than 4 hours.

Cooling rates must be verified using a probe thermometer and documented by staff according to premise Food Safety Plan.

Management must ensure documentation is consistently maintained by responsible kitchen staff for all cooled items.

Observation (CORRECTED DURING INSPECTION): Most sanitizer reservoirs in kitchen are less than 200 ppm Quaternary Ammonia.

Sanitizer test strips were sealed in packaging and have not been used since previous inspection.

Knife observed stored in sanitizer bucket in kitchen preparation area.
Corrective Action(s): All wiping cloth rags in use are to be stored in a container of sanitizer solution (200 ppm Quaternary Ammonia, to be verified by test strip).

Sanitizer containers are to be changed frequently to maintain 200 ppm Quaternary Ammonia.

Test sanitizer feeder daily to ensure 200 ppm Quaternary Ammonia is dispensed.

Do not store food utensils in use in sanitizer as this poses a direct chemical contamination risk to food.

Observation: Warehouse area - Mouse droppings on floor in NE corner of warehouse behind items on floor and left corner of bay door #2.

Bakery - dry food debris on floor behind small corner mixer unit and along adjacent wall leading to the windows.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.
