401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION):
The handwashing sinks in the front waitress area and beside the deep fryers had the water supply shut off to them. Staff were unable to wash their hands when they became dirty. Staff explained that there is a water leak and a plumber is coming to find and fix the problem.
Corrective Action(s):
Immediately turn on the water supply to all handwashing sinks and prep sinks so staff are able to wash their hands. Immediately call a plumber to fix the suspect water leak. During the inspection, staff turned on the water supply.

103 - Failure to hold a valid permit while operating a food service establishment [s. 8(1)]
Observation (CORRECTED DURING INSPECTION):
Premises has an expired food permit decal as the yearly permit fees have not been paid. Hand delivered the outstanding permi fees letter.
Corrective Action(s):
Immediately pay the fees to avoid closure of the premises. These fees are required to be paid in April every year, as the invoices are mailed out. During the inspection, staff provided $150 (cash) to pay for the fees.

209 - Food not protected from contamination [s. 12(a)]
Observation:
The kitchen handwashing sink had an uncovered containers of cut veggies beside it and an uncovered bowl of flour under the handwashing sink; and an uncovered bucket of batter under the soap and paper towel dispenser. These food items will become contaminated with dirty water splashing onto the food as staff wash their hands.
Corrective Action(s):
Immediately cover the containers/bucket of veggies and batter, and relocate the bowl of flour somewhere else to protect the food from becoming contaminated. If this is found again, the foods will be thrown away.

Observation:
Observed fruit/drain flies in the premises (waitress area and dishwashing area). Flies carry diseases as they land on food. Staff indicate they clean the surfaces with vinegar. Vinegar is a food and it will attract pests.
Corrective Action(s):
Immediately contact your pest company and have them eliminate the flies (fly strips, clean floor drains, fly lights). Immediately stop using vinegar to clean surfaces, only use soap or a bleach and water solution. Eliminate any pooling water or leaking pipes/faucets as flies will breed in pools of water.

Observation:
There is accumulated dust on the upper walls and on the grates of the return air diffusers (above the dishwasher). The dust will fall on food or clean dishes and contaminate it.
Corrective Action(s):
Wash these surfaces to remove the dust. These areas shall be cleaned every month, add this to your cleaning schedule.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation:
The walls in the waitress are damaged and exposing unsealed drywall. This makes it hard to clean the wall properly and this will attract pests. This was mentioned in past inspection reports, and repairs have still not been completed.
Corrective Action(s):
Repair the walls so they are smooth, level, durable, sealed/painted, and cleanable. Failure to complete the repairs will result in the issuance of orders, tickets, and/or fines.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -10C or colder; hot holding units 60C or hotter; and thermometer present.
- Low temperature dishwasher had [Cl2] of 50ppm during the rinse cycle.
- Bleach sanitizer in spray bottle had [Cl2] of 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; labelled; date coded; foods store in groups with proteins separate or below RTE foods; and foods stored 6" off the floor on racks or shelves.
- No expired foods in use. FIFO rules being followed.
- Valid, FoodSafe certified staff present. Certificates posted.
- General sanitation level is satisfactory. Improvement could occur under equipment, sinks, prep tables, and shelving units.
- Orkin Pest Company contracted to monitor and eliminate pests. They service the premises 2x/month.
- Yearly permit fees were paid, staff provided $150 (cash).

**A follow-up inspection to occur on Aug. 28/23 to ensure the plumbing issue is fixed and that the fly problem has improved**
