-Walk-in cooler was at 3C.
-Sushi cooler was at 4C.
-Upright cooler was at 4C.
-Upright freezers were at -20C and -22C.
-Chest freezer was at -18C.
-Hot holding was greater than 60C.
-Sushi rice had a pH of 4.0.
-Cooked chicken and tempura cooler in shallow layers - less than 4C.
-Chicken reheated to greater than 74C and tempura reheated to greater than 71C in fryer.
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface (minimum 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Operator observed practicing good hand hygiene practices before food handling and handling order tablet.
-Bleach sanitizer pails labelled and tested at 200ppm.
-Sushi cutting board disinfected at least every 2 hours.
-General food storage practices good at the time of inspection. Foods stored off the floor and protected from potential contamination.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
-Operator FoodSafe Level 1 valid until Oct 13, 2023.
