Observation (CORRECTED DURING INSPECTION): Large buckets (three) of hot soup measured at above 70C were put on walk-in cooler at the time of inspection
Corrective Action(s): - Cool hot foods at outside (never in cooler) from 60C to 20C within 2 hours and from 20C to 4C inside cooler within 4 Hours.
- To help foods cool faster, stir it occasionally, transfer to shallow pans and use an ice wand
- Cool food inside cooler once it has reached 20C. Monitor the temperature closely using probe thermometer

Observation: Deserts cooler is not working and is measured at 9C internal food temperature and 9C ambient air temperature.

- All handsinks in kitchen,in washroom and at front coffee corner are adequately stocked
- All coolers in kitchen and bar are measured temperature less than 4C
- All freezers are functional and measured between -14 to -20C
- Hot holding unit at cookline is greater than 60C
- High temperature dishwasher is measured at 73C during final rinse cycle at the dish surface
- Bar glass washer is measured at 12.5 ppm iodine
- No evidence of pest activity is noted at the time of inspection
- Food storage practices are satisfactory
- General sanitation is satisfactory.
