Comments

-The main kitchen and a pop-up salad bar (which opens only during lunch time for less than 1 hour).

Discussed the following with chef:
-Cleaning and sanitizing equipment after use
-Ensuring the high-temperature dishwasher reaches 71°C at the dish level always
-Refilling the paper towel dispenser.

Salad Bar:
-Maintaining the refrigerated condition for all food items in the dispensing unit
-Filling up the trays/containers only half (maximum) to allow unanimous temperature at 4°C or below.

-Dishwasher was measured at 25.6°C at dish level
-QUAT sanitizer was measured at 200ppm
-Food storage was well-maintained
-All coolers were measured at 4°C or below
-All freezers were measured at -18°C or below.
