2) Dishwasher rinsing cycle max at 63.4 deg. C.
Correction: 1) Prepare bleach water daily in the morning.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Dishwasher not functioning properly.
Correction: Low temp dishwasher must sanitize all dishes @ 50ppm Cl. Do not use the dishwasher until fully repaired. A follow up inspection will be conducted tomorrow on March 15, 2018. Switch to manual dishwashing at the 2 comp sink.

3 oversized cooking pots have been removed from the premise. 3 cooking pots available are sized to fit within sinks and / or dishwasher.

Papertowel dispensers have been repaired and refilled to allow for staff handwashing.


COVID-19 Protocols
- plexiglass barriers have been ordered for center island seating area, premise will not operate until April 19, 2021 with respect to recent PHO Order.
- bleach (1000 ppm chlorine = 20ml bleach / 1 liter water) will be used to disinfect high touch surfaces

ACTION
- Forward revised COVID-19 Safety Plan for review that details the following:
- health screening questions to staff prior to commencing work
- list of high touch surfaces that need frequent disinfection
- instructions to staff how to prepare 1000 ppm chlorine solution to disinfect high touch surfaces.
