Observation (CORRECTED DURING INSPECTION): 1. Hand wash station in kitchen has no soap.
2. Hand wash station was being used as a 'prep' sink to defrost frozen, pre-packaged alfredo sauce.
Corrective Action(s): 1. Soap acquired for hand wash station.
2. Alfredo sauce package removed from sink.

You are NOT permitted to use the hand sink for doing anything other than hand washing.

209 - Food not protected from contamination [s. 12(a)]
Observation: Zep "FS Supermarket Sanitizer" is being dispensed at >>> 400 ppm. Manufacturer's bottle states that it is only intended to be used in "food plants and industrial settings".
Corrective Action(s): This concentration is too high for food service establishments. Sanitizer should be dispensed according to manufacturer's directions and typically at 200-400 ppm.

1. Manually dilute sanitizer so that it is released at approximately 200 ppm (Done at time of inspection)
2. Adjust your dispenser so that it only releases 200 ppm quaternary ammonium compound (Correct by Dec 19, 2018)

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Alfredo sauce was being defrosted inside a hand wash station submerged in warm water.
Corrective Action(s): This is not allowed. Alfredo sauce was placed into the cooler at time of inspection.

1. Do not use the hand wash station to defrost alfredo sauce.
2. You are only allowed to defrost items via the following methods:

- Under cold running water
- In a microwave (if packaging is microwave safe)
- As part of the cooking process
- In the cooler overnight

Comments

Routine inspection conducted. Facility generally in good sanitary condition. The following observations were made:

1. Temperatures
- Prep cooler at 4C (bottom) and 4-5C (top). Ensure that you CLOSE the lid when not in use
- Walk-in cooler at 1C
- Beverage cooler at 4C
- No hot-holding occurring on-site
- Temperature logs were OUT OF DATE since Nov 14, 2018. You need to maintain your logs EVERY DAY so that you know when equipment is malfunctioning

2. Hygiene and Sanitizing
- Hand wash station stocked with hot/cold running water, liquid soap, and single-use paper towels
- Sanitizer spray bottle up front at 200 ppm quaternary ammonium compound
- Utensils generally in good sanitary condition
- Dispenser is currently releasing >>> 400 ppm QUATS in 3-compartment sink. Sink was emptied and sanitizer was manually diluted to 200 ppm (1 to 2 capfuls into a sink, 75% filled with water)

3. Storage
- Food items stored at least 6" off the floor
- Ingredients are either packaged or covered with lids
- Chemical storage area in back does not contain any food items

4. Pest Control
- No recent signs of pest activity at time of inspection
- Inspected 5x mechanical rodent traps (one which lacked an adhesive near the front of the kitchen) - no rodents present in traps
- Email most recent pest control report to the health inspector by Dec 12, 2018

5. Administrative
- Employee on duty has FoodSafe 1
- Permit posted and up-to-date

Environmental Health Officer will be having further discussions with ownership regarding sanitizer levels. A follow-up inspection will be conducted.
