301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Notes scoop for ice machine stored on top of ice machine.
Corrective Action(s): Keep the scoop for ice stored in a separate container and ensure both the scoop and the container are routinely washed and sanitized (ie. put through the dishwasher). Do not store the scoop on top of the ice machine as this is not a sanitary area for a food utensil.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizer detected in container that was supposed to be sanitizer solution in the drink making area. Staff member said she made the solution at the start of the day and put one drop of bleach in it. Sanitizer solution in spray bottle in drink making area was too strong (ie. bleaching out the test strip)
Corrective Action(s): Ensure sanitizer solution is maintained at 100ppm. Staff member added a capful of bleach to obtain that concentration in the container and diluted the sanitizer in the spray bottle. Use test strips on site to verify 100ppm is obtained (ie. 5ml of bleach per liter of water).

Observation (CORRECTED DURING INSPECTION): No paper towel was available at the hand sink in the kitchen. Also noted some cleaning equipment stored on the floor around the hand sink.
Corrective Action(s): Ensure all hand wash stations are fully equipped with soap, paper towel, hot and cold running water at all times. Keep hand wash stations clear and accessible at all times. Do not store anything inside or around the hand sink that will obstruct or hinder access to/use of hand sink.

Observation (CORRECTED DURING INSPECTION): Noted screen over open back door was open (ie. not shut).
Corrective Action(s): Keep screen shut and in place over open back door at all times to prevent the entry of pests.

Comments

- All coolers 4C or less (walk in cooler, pop cooler, prep cooler)
- Both chest freezers less than -18C
- All hot holding 60C or higher (broth and rice). Note: curries were still being cooking on the stove in preparation for lunch rush. Ensure hot holding units are preheated to 60C before transferring hot foods into them.
- Hand wash stations in the washrooms (both public and staff) and the front drink making area were fully equipped and accessible
- Container of sanitizer in the back food preparation area was at 100ppm chlorine.
- Lights in food preparation areas had covers/sleeves.
- Ice machine appeared clean.
- General sanitation satisfactory.
- Low temperature dishwasher had 50ppm chlorine sanitizer. Test strips available to verify concentration of sanitizer solution.
