Hand wash stations are supplied with hot and cold running water, liquid soap in dispenser, paper towels in dispenser.
Coolers and Walk in coolers are <4C.
Freezer <-18C.
Cooling processes: after cooking and cooling down on counters for 30-1hr, batches of meat, soups and other items are transferred to the cooler.
After 30-1hr, internal temperature of chicken leg stacked in plastic bin 30-40C. Recommend putting meats in to shallow, metal pans or trays for faster cooling.
Operator uses ice wand to cool down stock, great job.
Hot holding take out meals >60C surface temperature.
Meals are taken out directly from hot holding unit and served in packaged trays at the back of the facility.
Dry storage food donations are in one area.
No signs of pests at the time of inspection.
Dishwasher 50-100ppm chlorine.
Sanitizer Quat >1000ppm. Please see manufacturer's instructions for rinsing or diluting for food contact surfaces and safety instructions.
200ppm Quat is required.
Food prep counters and surfaces are clean and in good repair. Thank you.

Operator plans on opening the store front part of the facility soon.
