Observation (CORRECTED DURING INSPECTION): Ice machine cavity has food stains on the walls and mold/mildew buidlup at the ice dispenser
Corrective Action(s): Empty out the ice machine. Clean and sanitize

Observation (CORRECTED DURING INSPECTION): Dishwasher is inoperative -operator knew about it and indicated repairman is coming tomorrow and it has been down for the last two days.

Operator has been Manually Dishwashing at 2-compartment in the meantime. Reviewed Manual Wash method and he is only rinsing the ware with the QUAT sanitizer.

Corrective Action(s): When the dishwasher is in need of repair you are to repair the washer IMMEDIATELY do not take 3 days until the repairman can come in. Operator called repairman and will be coming later today. You are to ONLY USE DISPOSABLES for customers to reduce dishwashing needs.

When Manual Washing you must submerse the ware for a minimum of 30 seconds in the sanitizer -provided a manual wash sign to be posted as a reminder.

Operator replaced sanitizer spray bottle >200ppm QUAT residual. Note you must let the QUAT dispenser run for at least a minute so it is mixing properly.
