General:

- Hand sinks equipped with hot/cold running water, liquid soap, and paper towel
- All coolers temperature at 4 degree C or less
- Walk-in cooler temperature at -18 degree C
- Hot holding units temperature at 60 degree C or above
- Low temperature dishwasher chlorine residual at plate surface tested 50 ppm
- QUATs sanitizer in spray bottle tested at 200 ppm
- Sanitizer bottle is clearly labeled
- Back door remained close during service
- General sanitation is good!
- Temperature log is maintained
- Staff on-site has FS

*** Discussed re: Smoked vacuumed packaged salmon - keep frozen till consumption or take out from package ( store in a covered container ) and store in fridge to defrost - rick of C. Bottulisum spore ( anorobic)
*** No poison boxes noted. There are still some sign of rodent in corner and under shelving, foods are protected- continue with monitoring and pest control - sanitize all surfaces before any food handling
