Use other available cutting boards in the meantime.

Comments

- Hand sinks were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Bleach sanitizer solution available in labelled spray bottles at 100 ppm (chlorine residual).
- High-temperature dishwasher reached above 71C at the dish surface during sanitizing rinse cycle - good.
- All coolers were measured at 4C or colder
- All freezers were measured at -18C or colder
- Discussed cooling procedures - good.
- Food stored properly covered in coolers, freezers, and dry storage areas
- General sanitation satisfactory (although some cleaning in hard-to-reach areas required - see violation code 306 above).
- Ventilation canopy, dosa machine, insides of coolers, and other food-related equipment maintained in sanitary conditions.
- Shelves and countertops were free of clutter at time of inspection
