- Hand-washing basins are stocked with hot/cold water, soap, and single-use towels
- Refrigeration temperatures are ≤4o Celsius with exception of the main display cooler (~10C-currently in defrost mode)
*Please confirm that the display cooler temperature returns to <4 Celsius after defrost cycle completes
- Freezer temperatures are satisfactory
- Hot-holding unit was turned-off at time of inspection.
*Reminder: Foods may be displayed at room temperature for a maximum of 4 hrs after cooking/baking. Discard any leftovers after the 4 hr time limit.
- Quaternary-ammonium food-contact surface sanitizer solution available at 200ppm concentration (Cintas Z1 quats sanitizer)
* Installation of a commercial dishwasher is recommended for warewashing baking equipment/utensils.
- Ensure to regularly clean & sanitize storage shelves for dry goods and ingredients
*Remove plastic film from the metal shelf to facilitate cleaning
