Observation: Wiping rags observed being stored at workstations when not in use
Corrective Action(s): Wiping rags when not in use must be stored in a sanitizer container and kept fully submerged. Solution to be changed every 2 hours or more frequently depending on the organic load introduced into the sanitizer.
Recommend using "QUAT" sanitizer at 200ppm as this does not impart any odor onto food or food prep surfaces.

Observation: Hot water tap fixture observed to be not working on one of the 2 kitchen hand sinks.
Corrective Action(s): Repair hot water tap.

Observation: Mice droppings observed in premises. Premises has a pest control contact in place and traps observed throughout the premises
Corrective Action(s): Bin all food items that can potentially be chewed into. This would include all rice, flour, noodles sesame seed bags etc.
Purchase glue boards and deploy at night as discussed.

Observation: Openings observed at the base of both the back door and front door entrance sufficient to allow the entry of pests.
Corrective Action(s): Properly affix weather stripping to prevent pest entry.

Observation: Old mice droppings observed below and behind all kitchen equipment.

**Monitoring logs are not being maintained. Log sheets are on site. Add "month" and "Corrective actions" to log sheet and record daily to show you are doing your due diligence.
**Ensure access to kitchen hand sink is never blocked. Items on floor removed at time of inspection to allow access to hand sink.
**Recommend installing a magnetic strip holder to affix clean knives
Dishwasher at 73c (at plate level). Soap dispensed into wash cycle
