Observation: 1) Ready to eat foods left uncovered in the walk in cooler. 2) Food containers stored on the ground. 3) Raw fish stored above ready to eat foods in walk in cooler.
Corrective Action(s): 1) All food must be covered with properly fitting lid so that dust particles flying around in the cooler do not land on the ready to eat food. 2) All food must be stored at least 6 inches from the ground to that hard to reaches places can be cleaned properly. 3) Raw food should not be stored above ready to eat foods as raw meat juices can fall on and contaminate the ready to eat foods.

Observation: There is a large abundance of food droppings and debris under equipment and hard to reach places. There is also a lot of grease and food debris on handles of walk in coolers, walls of walk in coolers, and on the walls of the kitchen.
Corrective Action(s): Clean the menioned areas and stick to a frequent cleaning schedule to avoid heavy build up.

High temperature dishwasher reached 71 degrees C. on plate surface during sanitizing cycle.
